
I wouldn't say the salad was my favourite salad ever, but next time I'd add cheese (sorry, veganism, I love cheese).
Brussel Sprout Coleslaw
- Cut and wash the brussel sprouts, separate the leaves
- Toss with nuts and sunflower seeds
- 1 part olive oil to 2 parts lemon juice
- Salt and pepper
Pasta Sauce with Caramelized Onions
- Cook the onions on high for an hour in the slowcooker
- Add a bit of brown sugar, and chopped cauliflower and peppers
- Cook on high for 4 hours, stirring occasionally
- Add cooked green lentils, spinach, and 3 cups tomato sauce, cook on high for half an hour
First challenge ingredient down.
