Brussel sprouts are odd, or, Another Vegan Supper

Today I ate and cooked brussel sprouts for the first time. I don't know why I decided to try them since that and broccoli are the things children complained about in picture books (well, I love broccoli, maybe that gave me the bravery to try it...). It wasn't as bad as I had expected. Like a rubbery lettuce? I didn't know how much of it to use but I decided to throw away the white innards.
I wouldn't say the salad was my favourite salad ever, but next time I'd add cheese (sorry, veganism, I love cheese).

Brussel Sprout Coleslaw
  • Cut and wash the brussel sprouts, separate the leaves
  • Toss with nuts and sunflower seeds
  • 1 part olive oil to 2 parts lemon juice
  • Salt and pepper
The spaghetti was delicious. First I caramelized the onions then added the veggies... Delicious. The sauce becomes sweet and MAN it looks like mush but it's delicious, easy mush.

Pasta Sauce with Caramelized Onions
  •  Cook the onions on high for an hour in the slowcooker
  • Add a bit of brown sugar, and chopped cauliflower and peppers
  • Cook on high for 4 hours, stirring occasionally
  • Add cooked green lentils, spinach, and 3 cups tomato sauce, cook on high for half an hour
 Good meal.
First challenge ingredient down.
Next week, beets?
